Being part Irish, I felt the need this year to make some special St Patrick’s Day cupcakes to share!
St Patrick's Day cupcakes in a Chocolate Pot of Gold • AtopSerenityHill.comI couldn’t seem to make up my mind as to what to use, so I ended up combining most of my favorite things…cake, chocolate, buttercream icing and sprinkles!
St Patrick's Day cupcakes in a Chocolate Pot of Gold • AtopSerenityHill.comThe first step I took was to create my chocolate pots for the “gold”. I used the back of my mini cupcake pan and covered some of the sections with foil. I melted Wilton candy melts in milk chocolate in a glass measuring cup according to the directions on the package. Using a spoon, I poured about a tablespoon of melted chocolate onto the top of the foiled section. I did use the spoon to “help” the chocolate drip down the sides to form a cup shape. I didn’t try to be too precise with the shape. I actually liked the free-form look of the pots and all the wrinkles the foil created. I put my cupcake pan into the freezer for a couple minute to harden the chocolate but it will also harden just out in the air as well.

I choose this brand because it added an extra rainbow effect to the cakes. Even though I ended up taking off all the wrappers, I did bake all the cupcakes in them so they would not stick to the pan.

After peeling off the wrapper of each cupcake, I iced the bottom and sides with my yellow buttercream icing. They then got popped into a chocolate pot and more icing was added to the tops.
St Patrick's Day cupcakes in a Chocolate Pot of Gold • AtopSerenityHill.comSo, lets talk a bit about the rainbow part of the cupcakes. I had envisioned carefully adding lines of sprinkles to the tops of the cupcakes to form a rainbow. Yeah…THAT didn’t happen! So I ended up just adding sprinkles randomly over the icing and calling it a messy rainbow! You know, something that a drunk Leprechaun might do! Still cute!

These St Patrick’s Day cupcakes are a complete sugar rush and worth every calorie in my opinion. Since they are mini, why not have two?! May the luck of the Irish be with you this St Patrick’s Day!
